Bookish Sips Gingerbread Eggnog Recipe
You’ll Need
For the Gingerbread Rim
- 2 gingerbread cookies, finely crushed
- 1 tablespoon golden syrup or honey
- Extra cinnamon for dusting
For the Eggnog
- 500 ml full cream milk
- 250 ml thickened cream
- 3 egg yolks
- 1/3 cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- A pinch of cardamom
- Pinch of salt
Optional (But Plot-Relevant)
- 30 to 45 ml dark rum, spiced rum, or bourbon per serve
How to Make It
Prep the glasses first
Dip the rim of each glass into golden syrup, then into the crushed gingerbread cookies. Set aside. Try not to snack too much on the crumbs. No judgement if you do.
Warm the milk and cream
In a saucepan over medium heat, gently heat the milk and cream until steaming but not boiling. Stir occasionally and imagine this is part of a romcom montage.
Whisk the eggs and sugar
In a bowl, whisk the egg yolks and brown sugar until pale and slightly thickened.
Temper the eggs
Slowly pour a ladle of the warm milk mixture into the egg mixture while whisking constantly. This step prevents scrambled eggnog, which is absolutely not the vibe.
Bring it all together
Pour the egg mixture back into the saucepan. Add vanilla, spices, and salt. Cook gently over low heat, stirring constantly, until slightly thickened. Do not boil.
Strain and chill
Strain the eggnog into a jug and allow to cool slightly. Chill for at least 1 hour for peak flavour.
Serve like a main character
Pour into your gingerbread-rimmed glasses. Add alcohol if using. Finish with a light dusting of cinnamon or nutmeg.
